  • 6 oz. pancetta, diced
  • 3 Tbs. unsalted butter
  • 1 yellow onion, diced
  • 2 celery stalks, diced
  • 2 garlic cloves, minced
  • 2 tsp. chopped fresh thyme
  • 2 Tbs. all-purpose flour
  • 2 lb. Yukon Gold potatoes, peeled and diced
  • 2 bay leaves
  • 1 cup heavy cream
  • 2 tsp. Worcestershire sauce
  • Salt and freshly ground black pepper, to taste
  • Pinch of cayenne pepper
  • 1 Tbs. chopped fresh chives (optional)
