Roast stuffed loin of pork with crackling and Bramley apple sauce

Ingredients

  • 1 long loin of pork, (2.25 kg), suitable for rolling, with skin
  • salt and freshly ground black pepper
For the stuffing

  • 50 g butter
  • 2 tbsp olive oil
  • 2 onions, chopped
  • 2 cloves garlic, finely chopped
  • 6 tbsp chopped mixed herbs, such as parsley, thyme and sage
  • 200 g white breadcrumbs
  • salt and freshly ground black pepper
For the apple sauce

  • 450 g Bramley apples
  • 50 g caster or granulated sugar
For the gravy

  • 600 ml chicken stock
  • 10 g butter
  • 10 g flour
  • salt and freshly ground black pepper
