Deep fried fish with spiced mayonnaise

Ingredients

  • 1 flounder or plaice, filleted
  • 3 tbsp flour
  • 1 egg, beaten
  • handful panko Japanese breadcrumbs
For the spiced mayonnaise

  • 300 ml mayonnaise, preferably home-made
  • 3 sprigs spring onions, finely sliced
  • 2-3 tinned anchovies, chopped
  • 1 small red chilli, chopped
  • 2 cloves garlic, crushed
  • 2 tbsp finely chopped chives
  • 1 tbsp Dijon mustard
  • 2 tbsp tomato ketchup
  • 1 tbsp Worcestershire sauce
To serve

  • handful watercress
  • lemon wedges
