Grilled lamb cutlets with a warm summer vegetable salad

Ingredients

  • 200 ml olive oil
  • 12 lamb cutlets
  • 2 cloves garlic, peeled and sliced
  • 1 large sprigs thyme
  • 1 large sprigs rosemary
  • 1 large sprigs basil
For the vinaigrette

  • 2 tsp Colmans English mustard
  • 50 ml balsamic vinegar
  • 150 ml extra virgin olive oil
  • 2 large shallots, finely chopped
  • 1 tsp chopped basil
  • 1 tsp chopped mint
For the vegetable salad

  • 100 g asparagus, (about 12 spears)
  • 50 g shelled peas
  • 50 g French beans, topped and tailed
  • 50 g broad beans, peeled
  • 12baby carrots, peeled and washed
  • 1 sprigs tarragon
  • 150 g small new potatoes, washed and scrubbed
  • 1/2 heads garlic
  • 1 sprigs thyme
  • 1 sprigs mint
  • 1 bay leaf
