  • 225 g red onions
  • 225 g courgettes
  • 350 g aubergines
  • 250 g bulb fennel, trimmed
  • 1 red pepper
  • 1 yellow pepper
  • 110 g button mushrooms
  • 6 cloves garlic
  • 110 g cherry tomatoes, (or small vine tomatoes)
  • 7 tbsp olive oil
  • 725-850 ml white wine vinegar
  • 8 fresh bay leaves
  • 8 small sprigsfresh rosemary and thyme
  • 16 black peppercorns
  • 175 g sea salt
