Ingredients

  • 4 lobster, each weighing about 450g
  • 2 tbsp groundnut oil
  • 1 tbsp tomato pure
  • 2 tbsp cognac
  • 100 ml dry white wine
  • 20 g cep mushrooms, soaked in 100ml water
  • 100 ml double cream
  • 1 pinches salt
  • 1 pinches cayenne pepper
  • 2 tbsp unsalted butter
  • 20 chestnuts, cooked
  • 12 spring onions, trimmed and blanched
  • 200 g borlotti beans, or white beans cooked
  • 2 peppers, roasted
  • 16 basil
