  • 600 g beef fillet
  • 12 shallots, peeled
  • 2 red onions, sliced
  • 1 tbsp tomato pure
  • 3 clove garlic, peeled
  • 400 ml Guinness
  • 3 sprigs of thyme
  • salt, and freshly ground pepper
  • 25 g butter
  • 1 tbsp flour
  • mashed potato, to serve
  • 2 tbsp chives, chopped, to garnish
