Ingredients

  • 4 sage leaves
  • 4 slices cheese
  • 4 thin slices prosciutto
  • 4 boneless, skinless chicken breasts, (175g each)
  • 2 tbsp plain flour
  • sea salt flakes and freshly ground black pepper
  • 4 tbsp extra virgin olive oil
  • 25 g butter
  • 100 ml dry white wine
  • juice of 1/2 lemons
  • 1 tbsp flat leaf parsley, finely chopped
For the quick tomato sauce:

  • 4 tbsp olive oil
  • 1 onion, finely chopped
  • 1 clove garlic, crushed
  • 450 g cherry tomatoes
  • 15 g basil, torn into small pieces
  • black pepper
  • 1 tsp brown sugar, (optional)
