- 3 tinned anchovies
- 1 large clove garlic, thinly sliced
- 1 fresh red chillies, deseeded and chopped
- freshly grated parmesan, to serve
- black pepper
- 500 g '00' flour, or unbleached flour
- 3 whole eggs, lightly beaten
- 1 tbsp olive oil
- good pinch of salt
