Pumpkin-pear Bisque With Creme Fraiche

Ingredients

  • 2   leeks (white part only), thinly sliced (2/3 cup)
  • 1 medium  sweet onion, chopped (1/2 cup)
  • 2 tablespoons  margarine or butter
  • 3 tablespoons  all-purpose flour
  • 4 cups  chicken broth
  • 1 15-ounce can  pumpkin
  • 1/2 of a  vanilla bean, split lengthwise, or 1 teaspoon vanilla extract
  • 1/4 teaspoon  salt
  • 1/4 teaspoon  ground white pepper
  • 1/4 teaspoon  ground nutmeg
  • 3   Poached Pear halves and 1 cup pear liquid (see recipe below)
  • 1/2 cup  half-and-half, light cream, or milk
  •   Creme Fraiche (see recipe below)
  •   Ground nutmeg (optional)
