Twice-baked Potatoes

Ingredients

  • 2 large  Yukon Gold potatoes (about 1 pound)
  • 2 teaspoons  olive oil
  • 1/2 teaspoon  salt
  • 3 tablespoons  milk
  • 2 tablespoons  butter or margarine
  • 2 tablespoons  dairy sour cream
  • 1 tablespoon  snipped fresh chives
  • 1/4 cup  finely shredded Gruyere or Swiss cheese (1 ounce)
  •   Salt
  •   Ground black pepper
  •   Snipped fresh chives (optional)

Description

Yukon Gold Potatoes Have Rather Thin Skins So Be Careful Not To Damage Them As You Scrape Out The Pulp. The Stuffed Potatoes Can Be Made Ahead And Reheated Later.
