Salmon With Cilantro-pineapple Salsa

Ingredients

  • 1 1-pound  fresh or frozen skinless salmon fillet, about 1 inch thick
  • 2 cups  coarsely chopped fresh pineapple
  • 1/2 cup  chopped red or green sweet pepper
  • 1/4 cup  finely chopped red onion
  • 1/2 teaspoon  finely shredded lime peel (set aside)
  • 3 tablespoons  lime juice
  • 1 small  fresh jalapeno chile pepper, seeded and finely chopped*
  • 2 tablespoons  snipped fresh cilantro or parsley
  • 1/2 teaspoon  chili powder
  • 1/4 teaspoon  salt
  • Dash  cayenne pepper
  •   Lime wedges (optional)
  •   Torn lettuce (optional)
