- 1/2 cup mixed herbs, such as parsley, mint and thyme
- 4 pieces bone-in, skin-on chicken breast
- 5 tablespoons butter
- Salt and pepper
- 1/3 cup Wondra superfine flour
- 1 tablespoon smoked sweet paprika or paprika, (a palmful)
- 1/2 tablespoon dry mustard
- 1 tablespoon ground red pepper or chili powder blend, such as Gebhardt’s
- 1 teaspoon ground fennel
- 1 teaspoon ground coriander
- 1 cup chicken stock
- 1 lemon, juice of half and half cut into wedges
