- 2 tablespoons extra virgin olive oil (EVOO), plus some for drizzling
- 3/4 pound chorizo sausage, thinly sliced, found in the packaged meats section near the kielbasa
- 3 cloves garlic, 2 chopped and 1 crushed
- 1 large yellow onion, chopped
- 2 ribs celery, chopped
- 1 large carrot, peeled and chopped
- 6 medium size red potatoes, halved and thinly sliced
- 4 sprigs fresh thyme
- Salt and pepper
- 1 can fire-roasted diced tomatoes (28 ounces), such as Muir Glen brand
- 2 cups chicken broth
- 4 thick slices crusty farmhouse, country-style bread
- 1/2 cup flat leaf parsley leaves (a few large handfuls), picked
- Zest of 1 lemon
- Zest of 1 orange
- 2 tablespoons white wine vinegar (eyeball it)
- 4 eggs (1 per serving)
