- Salt and pepper
- 1 can tomato sauce (15 ounces)
- 2 cups quick-cook polenta, found in Italian foods or specialty foods aisles
- 1/4 cup (a generous handful) cilantro leaves, chopped
- 2 scallions, sliced
- 1 cup shredded cheddar cheese
