This is a great and hearty soup that always makes me feel better on those sick rainy days.
Remove skin from chicken thighs and lightly season with salt and pepper. In large pot add water, chicken, tomato paste, onion, bouillon, garlic, and oregano. Bring to a boil then reduce heat to low/Med. let simmer for 30 minutes. Add potatoes and carrots cover for another 30 minutes add saffron, lemon juice, and salt & pepper.
You can add noodles if you like
If you don't have saffron you can use one one packet for Sazon Goya with Culantro and Annato.
