7 oz couscous

2 tbsp pine nuts

2 tbsp flaked almonds

1 - 15 oz can chickpeas, drained and rinsed

1 tbsp chopped fresh mint or parsley

9 oz roasted red peppers from a jar, drained

Salt and freshly ground black pepper
