Walk-away Roast Chicken With Lemon & Herbs

Ingredients

  • 2 tablespoons  olive oil 2 tablespoons Dijon-style mustard
  • 1 teaspoon  dried thyme(or 1 tablespoons fresh, chopped)
  • 1 teaspoon  dried rosemary (or 1 tablespoon fresh, chopped)
  •   Salt and freshly ground black pepper to taste
  • 1   lemon, halved
  • 1   whole roasting chicken (about 3-1/2 pound), rinsed under cold water and dried
  • 1   onion, cut into thick slices
  • 4 medium  red potatoes, washed (but not peeled) and sliced in half
