Thukpa-tibetan Soupy Noodles Recipe

Ingredients

  • 2 cups rice noodles
  • 1/2 Kg chicken breasts, cut into very thin 1/8 inch slices
  • 1/2 cup carrots, thinly sliced
  • 1/2 cup red bell peppers, thinly sliced
  • 1/2 cup celery, thinly sliced
  • 1 cup spinach, washed and cut into pieces
  • 1 cup onions, chopped
  • 1 Tbsp garlic, minced
  • 1 Tbsp ginger, minced
  • 1/2 tsp turmeric
  • 1/2 tsp szechwan pepper
  • 1/8 tsp asafetida powder
  • 1 bay leaf
  • 3 fresh chili peppers sliced
  • 2 cups tomatoes, chopped
  • 6 cups vegetable/chicken broth
  • 2 Tbsp cooking oil
  • salt and pepper to taste
  • 1 Tbsp chopped cilantro (to garnish)
