Ingredients
- 1 Tbsp vegetable oil
- 2 x 410g cans coconut milk
- 2 Tbsp red curry paste
- 1kg chicken thigh meat, trimmed and cut into 2cm pieces
- 500ml water
- 2 tsp fish sauce
- Juice of one large lime
- 2 tsp caster sugar
- 6-8 kaffir lime leaves, washed and torn
- 2- 3 medium red chillies, seeded and sliced on the diagonal
- 12 stalks Thai sweet basil, leaves only
- 1 medium custard apple, peeled, seeded and broken into segments
- Flaked salt, to taste
