Ingredients

  • 1 Tbsp vegetable oil
  • 2 x 410g cans coconut milk
  • 2 Tbsp red curry paste
  • 1kg chicken thigh meat, trimmed and cut into 2cm pieces
  • 500ml water
  • 2 tsp fish sauce
  • Juice of one large lime
  • 2 tsp caster sugar
  • 6-8 kaffir lime leaves, washed and torn
  • 2- 3 medium red chillies, seeded and sliced on the diagonal
  • 12 stalks Thai sweet basil, leaves only
  • 1 medium custard apple, peeled, seeded and broken into segments
  • Flaked salt, to taste
