  • 21/2 tbs olive oil
  • 800g butternut pumpkin, deseeded, peeled, cut into 1cm cubes
  • Salt & freshly ground black pepper
  • 300g (2 cups) frozen broadbeans
  • 1 x 420g can chickpeas, rinsed, drained
  • 1 long fresh red chilli, halved lengthways, deseeded, diagonally thinly sliced
  • 1/2 cup loosely packed coarsely chopped fresh coriander
  • 1 tbs fresh lemon juice
  • 1 garlic clove, crushed
