Ingredients

  1. 3 tablespoons plus 1 teaspoon soy sauce
  2. 2 tablespoons plus 2 teaspoons lime juice (from about 2 limes)
  3. 1 tablespoon cooking oil, plus 1 tablespoon more if needed
  4. 4 cloves garlic, minced
  5. 3/4 teaspoon ground ginger
  6. 3 boneless, skinless chicken breasts (about 1 pound in all)
  7. 1/2 cup chunky peanut butter, preferably natural
  8. 1 cup canned low-sodium chicken broth or homemade stock
  9. 1/2 teaspoon sugar
  10. 1/2 teaspoon salt
  11. 1/8 teaspoon dried red-pepper flakes, or to taste
  12. 3/4 pound spaghetti
  13. 3 scallions including green tops, chopped
  14. 1/3 cup chopped peanuts (optional)
