Ingredients
- For roasted Steak
- 4-5lbs beef roast(top or bottom sirloin or round or better)
- 2 cups beef stock
- 1 cup water
- 2 cans chipotle peppers in adobo
- 1 large onion, sliced
- 4 cloves garlic, minced
- 1T louisiana hot sauce
- juice from 2 limes
- 1T Cajun blend seasoning, divided
- fresh ground black pepper
- 16oz pepperjack cheese, shredded
- hard rolls for serving
- Mushroom mustard Sauce
- 16oz fresh mushrooms, sliced
- 1 clove garlic, minced
- 1 large onion, sliced thin
- 2 bell peppers sliced in rings or strips
- 2T butter
- 1T adobo sauce OR 2t ground chipotle powder(this is what I used)
- 1/4 cup Creole or Cajun style mustard
- 1t cajun seasoning blend
- fresh ground black pepper
