  3. 1/4 cup plus 1 1/2 teaspoons olive oil
  4. 3/4 teaspoon salt
  5. 1/2 teaspoon fresh-ground black pepper
  6. 1 small red onion, cut into very thin slices
  7. 1 tablespoon lime juice
  8. 1/8 teaspoon dried red-pepper flakes (optional)
  9. 1/2 cup chopped cilantro or fresh parsley
