Pistachio Crusted Flounder Recipe

Ingredients

For the fish:

  • 1/4 cup olive oil
  •  6 flounder filets
  •  1/2 cup flour
  •  2 eggs, lightly beaten
  •  1 1/2 cups panko crumbs
  •  1 1/2 cups shelled pistachio nuts, coarsely ground
  •  2 tbsp dried parsley
  •  2 tbsp dried minced onion
  •  salt and pepper
  •  Minneola Beurre Blanc (recipe follows) 

For the Beurre Blanc: 

  •  1/4 cup minced shallot
  • 1/2 cup white wine
  •  3 tbsp fresh Minneola juice
  •  3/4 cup heavy cream
  •  1/2 tsp. ground ginger
  •  6 tbsp softened butter, cut into chunks
  •  salt and pepper to taste
