  • salt and freshly ground black pepper

  • 250g/9oz emmental cheese, chopped

For the spring onion vinaigrette
  • 6 tbsp extra virgin olive oil

  • 2 tbsp sherry vinegar

  • 1 bunch spring onions, finely chopped

To serve
  • bunch green salad leaves
