Najwa's Okra Stew

Ingredients

  1. 1/4 cup extra-virgin olive oil
  2. 1 pound very lean veal shank meat, cut into 1/2-inch cubes
  3. Salt and freshly ground pepper
  4. 2 medium onions, halved and thinly sliced
  5. 4 garlic cloves, 2 chopped and 2 minced
  6. 1 cup drained canned tomatoes, chopped
  7. 1 1/2 pounds okra, sliced on the diagonal 1 inch thick
  8. 1/4 cup finely chopped cilantro
  9. 1/3 cup fresh lemon juice
