  • 375ml (1 1/2 cups) maple syrup
  • 1 lemon, zested
  • 10 sprigs lemon thyme
  • 2 bay leaves
  • 2 cinnamon quills
  • 1 vanilla bean, split, seeds scraped
  • 6 small beurre bosc or williams pears, peeled
  • RICOTTA & PISTACHIO CREAM

  • 360g (1 1/2 cups) fresh ricotta
  • 2 tbs pistachio halva, crumbled (see Notes)
  • 1 tbs finely shredded mint leaves
  • 1 lemon, zested
  • 2 tbs roughly chopped pistachios
