Ingredients

  • 1 med roasting chicken, (3-4 lbs)
  • 3 Tbsp. extra virgin olive oil
  •     salt
  •     freshly grnd black pepper
  • 1 1/2 c. orzo
  • 3 med onions, coarsely minced
  • 2 x garlic cloves, chopped
  • 2 lrg bell peppers, cored, seeded, and finely minced
  • 1 c. peeled, minced plum tomatoes
  • 1/2 tsp grnd cumin
  • 1/3 c. brandy
  • 4 c. water
  •     grated parmesan cheese
  •     Preheat oven to 450F.
