Jerk Pork and Pineapple Kabobs

Ingredients

  • 3 green onions, coarsely chopped
  • 1 clove garlic, minced, about 1 teaspoon
  • 2 teaspoons peeled and diced fresh ginger
  • ½ jalapeno or Scotch bonnet pepper, stem and seeds removed, chopped
  • 2 tablespoons jerk seasoning (see below)
  • ½ teaspoon sea salt
  • 2 tablespoons brown sugar
  • 2 tablespoons vegetable or olive oil
  • 2 tablespoons soy sauce
  • 1 package pork tenderloins (2 tenderloins per package), cleaned and cut into 1-inch cubes
  • 1 cup fresh pineapple chunks
  • Metal or Bamboo skewers
