Israeli Cous Cous Salad

Ingredients

    4 cups Israeli Cous Cous
    8 cups water
    1 Tbsp sea salt
    1 Tbsp Sumac (Middle Eastern spice)
    2 bunches green onions
    2 lg. shallots, finely chopped. (I was out of onions! Can
    easily use 1 medium onion)
    1/2 cup chopped fresh parsley
    1 medium cucumber, chopped
    Can 1-2 cups additional chopped veggies, zucchini,
    carrot, red pepper)
    1/2 cup currants or raisins
    1 can chick peas, optional
    1/2 cup Extra Virgin Olive Oil
    1/4 cup lemon juice
    1/2 tsp coriander
    salt and pepper, to taste

This Is The Large Round Style Of Cous Cous. HEB Makes A Salad With It. I Have A Large Family, You Can Easily Half This.
