Ingredients
- 1 tin black beans, rinsed (kidney beans also work well!) (15.5 oz / 435g)
- 1 tin corn, rinsed (12 oz / 340g)
- 1 red onion
- 2 spring onions
- ⅓ cup/80g couscous (get the âjust add waterâ variety for quickest results. If you have it/like it then quinoa can also be used here)
- 1 cube/tsp veggie stock
- 2 tbsp olive oil
- Juice of a small lemon or lime
- 2 tsp cumin
- 2 tsp paprika powder
- 2 tsp chilli flakes (less can be more, so scale down if you donât want it with much of a kick)
- 1 clove chopped garlic (a tsp of dried is fine too, but you can omit altogether if garlic breath isnât at the top of your list)
- Optional:
- Add a handful of raisins!
