Ingredients

Ingredients For the haggis-in-the-hole
  • vegetable oil or beef dripping, for cooking

  • 300g/10oz haggis, skin removed, filling divided into 12 pieces and rolled into walnut-sized balls

  • 75g/3oz plain flour

  • pinch salt

  • 2 free-range eggs

  • 100ml/3½fl oz milk

For the tatties
  • 800g/1lb 12oz potatoes, peeled and chopped

  • 2 leeks, finely chopped

  • large knob of butter

  • salt and freshly ground black pepper.

For the neeps
  • 1 medium swede, peeled and chopped

  • large knob of butter

  • 1 tbsp syrup from a jar of stem ginger in syrup

For the onion gravy
  • 1 tbsp vegetable oil or olive oil

  • 1 large brown onion, thinly sliced

  • 450ml/16fl oz beef stock
