Ingredients

  • 4 zucchini, very thinly sliced lengthways
  • 1 tbs extra virgin olive oil
  • 4 vine-ripened tomatoes, seeds removed, chopped
  • 2 x 120g buffalo mozzarella balls, drained, chopped (see Notes)
  • 1/2 cup basil leaves
  • Rocket salsa

  • 1 cup rocket leaves, stems removed
  • 1 cup flat-leaf parsley leaves
  • 1 garlic clove, finely chopped
  • 1 tbs tiny salted capers, rinsed, drained (see Notes)
  • 1 tbs red wine vinegar
  • 1/4 cup (60ml) extra virgin olive oil
