  • 1/4 cup peeled garlic cloves, quartered
  • 1/4 cup olive oil
  • 1/4 cup coarse sea or kosher salt
  • 1/4 cup coarsely ground black pepper
  • 1 tablespoon chopped fresh rosemary
  • 1 tablespoon chopped fresh thyme
  • Red Wine Jus (see below)
