Gado Gado

Ingredients

  1. 2 pounds boiling potatoes (about 6), peeled and cut into 1-inch chunks
  2. 1 pound green beans
  3. 8 carrots, cut diagonally into 1-inch chunks
  4. 1 pound broccoli, thick stems removed, tops cut into small florets (about 1 quart)
  5. 1/2 cup peanut butter
  6. 2 cloves garlic, crushed
  7. 1/2 teaspoon red-pepper flakes
  8. 1 tablespoon brown sugar
  9. 1/4 cup lemon juice (from about 1 lemon)
  10. 1 tablespoon soy sauce
  11. 3/4 teaspoon salt
  12. 1 cup hot water
  13. 2 scallions including green tops, chopped
  14. 1/3 cup chopped cilantro (optional)
  15. 2 cucumbers, peeled, halved lengthwise, seeded, and cut into 1/2-inch strips
  16. 1/3 cup toasted sunflower seeds or chopped peanuts, for garnish (optional)
