For the spare ribs

  • 450 g pork spare ribs
  • tsp sichuan peppercorns
  • 3-4 cloves garlic, sliced
  • 1 tsp coarse sea salt
  • tsp coarsely ground black pepper
  • 1 heaped tbsp cornflour
  • 1 pinches chinese five spice
  • 1 litres vegetable oil, for deep-frying
For the garnish

  • 1-2 tsp vegetable oil
  • 2 red bird's eye chillies, finely sliced
  • 6 spring onions, finely sliced
