Chili Relnos(stuffed Peppers)

Ingredients

1/4 cup Olive Oil
2 lbs Lean ground beef or chopped skirt steak
Salt and pepper to taste
1/2 tsp Garlic powder
12 tsp Ground cumin
1-2 Smaall potato,peeled and diced small.
1 Carrot,peeled and diced small
8 Roasted pablano Chiles pepper
5 Eggs, separated, yolks beaten
Mix and prepare tomato sauce(Optional)
1 can Embassa tomato sauce or tomatoes, quartered
1/4 cup Canaola oil
1 Medium white onion, peeled and thinly sliced
1/2 tsp Cumin
1/2 tsp Garlic powder
1/2 Green pepper, thinly sliced
Taste of salt and pepper
1 )Place tomatoes in blender & Puree. Set aside.
2 )Heat oil medium skillet over medium heat. Add onion and green pepper and cook until soft, 3-5 minutes. Add to skillet pureed tomatoes,garlic powder,ground cumin,salt,pepper and bring to a simmer. Reduce heat and simmer slowly 35 mins. Ladle and serve sauce over Chili Relnos.
