Chicken Tikka Masala

Ingredients

Marinade:
1 cup Low fat plain yogurt
1 tbsp. Freshly grated ginger
1 tbsp. Freshly grated garlic
1 tsp. Kosher salt
1/2 tsp. Black pepper
2 lbs. Boneless skinless chicken thighs – cut into bite sized pieces
Sauce:
1 tbsp. Butter
1 tbsp. Olive oil
1/4 cup Freshly grated ginger
1/4 cup Freshly grated garlic
2 Serrano peppers – finely minced
1/4 cup Tomato paste
2 tsp. Garam masala
2 tsp. Paprika
2 – 14.5 oz. Cans of diced tomatoes
1.5 tsp. Kosher salt
1 to 2 cups Water
1/2 cup Yogurt
Fresh minced cilantro for garnish
Cooked brown basmati rice – to serve over
