    3 stalks lemongrass, chopped into 2 inchpieces
    1 2 inch piece fresh ginger, coarsely chopped
    1 tsp. lime zest
    2 Tbs. thai fish sauce (optional)
    1 Tbs. vegetable oil
    2 Tbs. cornstarch
    4 cups fresh pineapple chunks, about 1 inch each
    1 tsp. salt
    2 Tbs. cilantro, chopped (dried 1Tbs)
    2 Tbs. mint, chopped
