Chicken Rice Porridge

Ingredients

  • 1 1/2 cups short or medium grain white rice, rinsed and drained
  • 4 cups water
  • 4 cups reduced-sodium chicken broth 
  • 3 boneless, skinless chicken breast halves thinly sliced 
  • 2 tablespoons fresh lime juice 
  • 1 teaspoon salt 
  • 1/2 teaspoon ground white pepper
  • 2 tablespoons Asian fish sauce 
  • 1 teaspoon sugar 
  • 4 green onions, finely chopped, for garnish
  • 1/4 cup cilantro leaves, chopped, for garnish
