Chicken parmigiana

Ingredients

  • 2 eggs, beaten
  • 1 tbsp water
  • 2 chicken breast fillets
  • 200 g breadcrumbs
  • olive oil, for shallow-frying
  • clove garlic, for rubbing
  • 1 mozzarella, finely sliced
For the tomato sauce:

  • 1 tbsp extra virgin olive oil
  • 1/2 onion, chopped
  • 3-4 cloves garlic, chopped
  • 2 large tomatoes, chopped
  • 1/2 tbsp capers
  • 1 tbsp tomato pure
  • 4 mushrooms, thinly sliced
  • 200 g pitted black Kalamata olives, in olive oil
  • 100 ml red wine
  • black pepper
To garnish:

  • mixed salad leaves
  • 1/2 lemon
  • handful of leaves basil
  • parmesan shavings
