Ingredients

  1. 2 tablespoons warm milk
  2. 1/8 teaspoon saffron threads, crumbled
  3. 3 tablespoons vegetable oil
  4. 6 white or green cardamom pods
  5. 1 cinnamon stick, broken
  6. 1 bay leaf
  7. 1 teaspoon whole black peppercorns
  8. 2 cups basmati rice (3/4 pound)
  9. 3 cups water
  10. Salt
  11. 2 medium onions, 1 finely chopped and 1 thinly sliced
  12. 1 large tomato, coarsely chopped
  13. 2 tablespoons Garlic Paste
  14. 2 tablespoons Ginger Paste
  15. 2 teaspoons garam masala
  16. 1/2 teaspoon cayenne pepper
  17. 1/2 teaspoon ground turmeric
  18. 1/4 teaspoon ground cloves
  19. 1/4 teaspoon ground mace
  20. 1/4 teaspoon ground cardamom
  21. 1/4 teaspoon ground cinnamon
  22. 1 1/2 pounds skinless, boneless chicken thighs, cut into 1-inch pieces
  23. 1/2 cup coarsely chopped cilantro leaves
  24. Freshly ground pepper
  25. 1 tablespoon unsalted butter, melted
  26. 2 tablespoons coarsely chopped mint leaves
  27. 1 tablespoon finely julienned fresh ginger
