Ingredients
- 1/2 Tbsp olive oil
- 1/2 Tbsp butter
- 1 shallot, minced
- 8 oz. mushrooms, quartered
- 1 clove garlic, minced
- 4 oz. (about 2/3 cup) uncooked orzo
- 1/2 cup dry white wine
- 2-3 cups chicken broth
- 1 cup cooked chicken, hot and diced (I just panfried in olive oil, seasoned simply with salt and pepper)
- 1/4 cup frozen peas, thawed
- 1/4 cup pecorino romano or parmesan reggiano
- 2 Tbsp chopped fresh basil (or any herb you like--I also really like this with rosemary)
