Breakfast Quiches - South Beach Recipe

Ingredients

  • 6 large eggs or 1 1/2 cup egg whites
  • 1 package frozen chopped spinach (10 oz.)
  • 3/4 cup shredded reduced-fat cheese
  • 1/4 cup diced red or green peppers or mixture of both
  • 1/4 cup diced onions

Description

I Double The Recipe, Because I Eat Two Each Morning For Breakfast And They Reheat Really Well In The Microwave. I Use Low-fat Lunch Meat (ham Or Turkey) Instead Of Using Paper Muffin Cups. Mmmmm.
