  • 1/4 cup chopped cilantro
Burritos

  • 1 cup crumbled Cotija cheese or feta
  • 2 roasted red peppers from a jar, thinly sliced
  • 2 teaspoons butter
  • 1 bunch scallions, chopped
  • 8 large eggs, beaten to blend
  • Kosher salt and freshly ground black pepper
  • 1/4 cup chopped cilantro
