Beef Tripe Soup (soto Babat) Recipe

Ingredients

  • 1 1/4 lb beef tripe cleaned, washed well
  • 1/2 lb beef boiled in
  • 5 c. water till tender and
  •     cut in 1/4" cubes (optional)
  • 12 c. water
  • 4 c. beef broth
  • 1 x inch ginger root peeled, and
  •     sliced lengthwise
  • 4 x garlic cloves peeled and sliced
  • 1 Tbsp. distilled white vinegar
  • 6 ounce giant white radish peeled, and
  •     diced in 1/2" cubes
  • 5 sprg celery leaf minced
  • 1 Tbsp. fried shallots
