  • 500g red potatoes, unpeeled and cut in 1.5cm thick slices, 1 med. onion, thinly sliced, 1 Tblsp olive oil, 1/2 tsp salt, 4 roma tomatoes, coarsely chopped, 3 cloves garlic, minced, 1/2 tsp dried oregano, 75g baby spinach leaves, 1 small snapper (approx. 500g).
