Ingredients
1 - 15 oz can red or pink Alaska salmon
1 - 7 oz bag mixed salad leaves
2 ripe avocados, pitted and sliced
9 oz roasted red peppers (bottled in oil or brine)
7 oz halloumi cheese, sliced
4 tbsp olive oil
2 tbsp lemon juice
tsp Dijon or wholegrain mustard
1 tbsp chopped fresh parsley
Salt and freshly ground black pepper
2 tbsp capers (optional)
