Ingredients
- 1/2 cup of tahini
- 1/2 cup of sweetener
- 1/4 of maple syrup
- 2 eggs
- 300g of silken tofu
- 2tsp vanilla extract
- 2 cups of grated carrot
- 2 tsp of cinnamon
- Couple of pinches of sea salt
- 2 cups of almond meal
- 1 cup of soy flour (or use desiccated coconut instead)
- 1 cup of sultanas - Alternatively you can use berries instead of the sultanas and personally sometimes, if I feel like going for the savoury rather than the sweet, I don't add the sweetener. The mixture tastes vile before you put it in the oven but very yummy once it turns into muffins!!
